Lassi! Isn’t the word familiar in Punjab? Odisha, formerly called Orissa, state of India located in the North-Eastern part of the country also have got a familiarity. Not just Odisha, currently we find lassi at every corner of the street around the country.
Well, lassi is quite of a colloquial term to write about but this one’s unique. Back in the school days, almost every kid has this memory of saving 10 rupees or so for drinks be it gola’s, sarbat, or lassi. The pockets are used to fill up with coins. Odisha, having a burning heat of 45degree Celsius or so required the drink you know. Nothing mattered whether the traffic or the roads that we, the children crossed by, all that was there in our eyes was the glass of lassi.
Having said that Odisha does have a unique lassi-making style, the makers use Chena and it’s more than a hundred years now. The makers continue the exact style of making, the same creative approach while Lassi, of Punjab, is adequately made of Curd, is often talked about around the country state but, Lingaraj Lassi will definitely make an impression on you, especially of Cuttack.
Lingaraj lassi, thick in nature, you’d find yogurt in it. Will find typical stalls around the cities. Now, let me give you a quick round-up of the process of making:-First comes the crushed ice, syrup, curd, and essence in each of the tall glasses. As the person makes up to 50 glasses at a time, each of the glasses is hand-mixed at high levels. This is then topped off with a thick layer of rabdi, nuts, raisins, and cherries. A glass of Lingaraj Lassi becomes ready and trust me it’s quite heavy and you’re ready till your next meal.
Likewise, Odisha is always cruel during summers and this is quite of a respite during the time. Yes, I know our friends or anyone staying in Delhi or Chandigarh would like the Lassi, we all know or talk about but somewhere Lingaraj Lassi will eventually make an impression, the essence will meet your taste buds and for Odia’s, Lingaraj Lassi is more like an emotion so as Dahibara Aloodum, right? Wherever, whichever place we are in, a 6-year-old kid or a 60-year-old man will always spend 10 bucks for this Lingaraj Lassi.
